Cucumber Relish

What you'll get is a sweet, tangy relish with a nice note of celery and a little

bitterness from the mustard seed to round it out. It's perfect for canning, but

there's no reason it can't be used right away.

Have all vegetables scrubbed, trimmed, and ready to finely chop, grind, or

process in the food processor. This is a delicious sweet relish, perfect for

hot dogs and sausages, and it's a great condiment to serve with peas,

beans, or limas.

Ingredients:

1. 4 cups ground unpeeled cucumbers (about 4)
2. 1 cup ground green pepper (about 2)
3. 쩍 cup ground red pepper (about 1)
4. 1 tablespoon celery seed
5. 3 cups ground onions
6. 3 cups finely diced celery
7. 쩌 cup salt
8. 3 쩍 cups sugar
9. 2 cups white vinegar
10. 1 tablespoon mustard seeds
